Product Description

Dessert for Two takes well-loved desserts and scales them down to make only two servings!

Who doesn''t love towering three-layer cakes with mounds of fluffy buttercream? Who can resist four dozen cookies fresh from the oven? Wouldn''t you love to stick your spoon into a big bowl of banana pudding? But what about the leftovers? Dessert recipes typically serve eight to ten people. Finding the willpower to resist extra slices of cake can be difficult; the battle between leftover cookies and a healthy breakfast is over before it starts. Until now.

Dessert for Two
takes well-loved desserts and scales them down to make only two servings. Cakes are baked in small pans and ramekins. Pies are baked in small pie pans or muffin cups. Cookie recipes are scaled down to make 1 dozen or fewer. Your favorite bars―brownies, blondies, and marshmallow–rice cereal treats―are baked in a loaf pan, which easily serves two when cut across the middle.

Newly married couples and empty-nesters will be particularly enthralled with this miniature dessert guide. To everyone who lives alone: now you can have your own personal-sized cake and eat it, too.

''Christina creates the most lovely small batch comforts! This book is bound to be bookmarked and butter-stained in my kitchen in no time." -Joy Wilson, author of Joy the Baker Cookbook

From the Author

I was born and raised just outside Dallas and I come from a long line of hardworking farmers. My maternal grandparents were cotton farmers in north Texas, and my dad''s family grew tobacco in the Carolinas. Southern food and farming runs through my veins like white whiskey.

When I first had the idea to take regular recipes and scale them down to make fewer servings, I attempted to reduce Texas Chocolate Sheet Cake to two small ramekins and it was disastrous: eggy and sunken in the middle. I learned baking really is a science, and you can''t just switch around ingredients and pan sizes will-nilly. But little by little, I learned and made progress. Plain chocolate chip cookies were mastered (the perfect butter-to-flour ratio took months). I mastered four vanilla cupcakes and then made many variations. Then one day, I came across a 6-inch cake pan at the hobby store, and I knew Dessert For Two was going to be a big part of my life.
I hope these recipes for small batches of desserts satisfy your cravings just right. I hope married couples put this book to use and grow closer 1/3 cup of chocolate chips at a time. I hope this book is a welcome addition to empty nesters: a way to still have dessert without the leftovers. And most of all, to everyone who lives alone: You should have your own personal-size cake and eat it, too.

From the Inside Flap

Love to bake, but wind up finishing every crumb yourself? Cookies, bars, cakes, and pies smell amazing while cooking, and are literally too tempting to resist when cooling on the counter.

Do you ever wish you could easily make just two servings of blueberry pie? Or brownies, lemon bars, even chocolate cake for two? You need to be a real expert to cut down recipes, though, and who has time to experiment with measuring spoons and scales?
Enter Christina Lane, a home baker whose passion for baking but not for over-indulging led her to start the blog dessertfortwo.com. Lane confesses that she used to make a full batch of dessert every night: Monday night, it was a Devil''s Food Cake made tender with the addition of mayonnaise; Tuesday night, it was her mom''s Ranger Cookies made with crunchy cornflakes; Wednesday she simply had to have some Key Lime Pie...and so on.
She decided to take her beloved stack of recipes - gathered over the years from friends and family in Texas and the Carolinas - and make them more realistic for her lifestyle (and waistline). Those recipes, many tried-and-tested by fans of her blog, are gathered together here with tips and advice on baking small.
Told with a friendly voice that could only come from a Texan, Dessert for Two provides you with all the information you need to make wonderful desserts with reasonable serving sizes.

I saw this cookbook recommended on Facebook, and I checked it out. The fact that we both watch what we eat but still want to indulge a little every now and then drew me right into this beautifully illustrated cookbook. Instead of baking a “normal” recipe that makes a lot of servings, these recipes make enough for two people. I usually give portions of my baked goods away so I won’t have them around to tempt me...yes, even freezing goodies don’t deter us! So the hard part was deciding which recipe to try first. Once I turned to the Oatmeal Cream Pies recipe on page 30, I knew I found where to begin. I followed the recipe and ended up with six sandwich cookies instead of five like the recipe called for. The recipe came together easily. I was pleasantly surprised at the generous size of the cookies. Then the taste test...OMG! Beyond my expectations! We had a friend over for dinner the next night, and he thought they actually tasted better than the original you use to buy in the store. For this recipe alone you should buy this book. I’m ready to try another recipe. You are welcome!

After trying 4 recipes from this book, I am very disappointed. The peach cobbler was awful. Tasted like a sponge with peaches. The chocolate chip cookies did not look or taste like chocolate chip cookies. The chocolate cream pie was runny and tasted like soup. The cheesecake was bland and tasted terrible. I followed every recipe exactly as written.
The size portions are small, more like dessert for one. The measurements seem to be off. I will not be wasting my time trying anymore of the recipes. I can''t understand all the positive reviews. They must be fake.

I have only made a few recipes from Christina, but I''m willing to bet that every single recipe in this book is going to be dang near perfect! Her tiramisu for two is like "oh wow, when did we land in Italy?" Her measurements are spot on - very little wastage and makes two normal sized servings for you and your special friend (which could be you-20 minutes from now). She doesn''t try too hard to fudge up stuff here - she uses good quality ingredients in tried and true food science. By this I mean, she uses sugar/butter/oil/flour, not substitutions. I love subs that make a recipe healthier, but subs introduce uncertainty that could spell out wasted time and money for the home chef. This cookbook offers you portion control in lieu of low fat or low cal standard portions. And just because it''s "dessert for two" doesn''t mean you can''t double each recipe and make dessert for your family of four. Wonderful book with recipes we all know and love, and many new and creative recipes, for a treat tonight, for the cheat day, for those of us who want to have our cake and eat it too.....and then promptly behave again. Until tomorrow.

Love, love, love this book. Thanks to "The Great British Baking Show," my husband decided he wanted to learn to bake. Unfortunately, I''ve been counting calories all my life and stopped making desserts years ago—a whole cake or batch of cookies was more than we could eat and stay healthy. This book is a godsend. We''ve enjoyed fruit crumble, German chocolate cake and blond brownies in portions just for two, with a snack left over. The directions are easy to follow, and the ingredients are fairly simple. I invested in some of the smaller baking pans that the author recommends for cakes and tarts (although many recipes use a standard bread pan). Can''t wait to try the next recipe.

The 6 inch pie pan and 6 inch cake pan can be purchased on line from Amazon. (And oh by the way, all you will be saying over these scaled down pans is how cute, how cute). Both of the recipes were great and perfect for two, actually 4. Tomorrow I am making her chocolate cake. I highly, highly recommend this book if you are looking to make desserts on a scaled down version.

I was curious about this book, but my library didn''t have it, so I requested it through interlibrary loan.....and enjoyed is do much that I borrowed it two more times. Then I demanded that my library get their own copy, which I borrowed another two times...before caving and buying my own copy. I''ve made several of the cake recipes, brownies, lemon puddings, lemon meringues....and each item has turned out great. I''m one of those people who just enjoys the process of baking and trying new recipes, but I don''t really want, or rather, NEED a full sized cake or dozens of cookies for just me husband and I. This fulfills both my baking habit and my sweet tooth. Be warned that the recipes inside are TRUE recipes; a mini cake from scratch here takes just as long as a full sized cake from scratch. These are downsized portions, not downsized time. If you want instant desserts for two, go make some rubbery microwaved mug cake. I recommend putting in the time and making the recipes in this book! I''ve since ordered her two other books "Simply Sweet" (more desserts for two!) and "Comfort and Joy" (meals for two).

LOVE LOVE LOVE THIS. Yes, this is another resounding ''hell yes, this is great'' review. THe idea here is portion control vs. low fat/less flavor recipes in 4-8 serving sizes. Love her notes, she''s as approachable and helpful as Nigella Lawson, with the same, ''don''t sweat this, it''ll be great'' attitude about cooking and baking. Her notes are terrific help. She warns when not to get ''inventive'' and when you can change things up. Nothing is fussy or requires special skills. She covers the basic, beloved cookies, bars and cakes, but throws in special treats from family or her own explorations. There were so many recipes I''d like to make, I may end baking more than half of the recipes. (Must pace myself. Must share. Or EMTs will have to knock a hole in the wall of my house to extract me after my heart attack.) If you enjoy Nigella Lawson''s breezy and delicious approach to food, I think you''ll enjoy this.

I got pretty excited to try a recipe when I received this book yesterday. This morning got up and mixed up the Devil''s Food Cake recipe with my new little 4" pan bought on Amazon. The directions had me put the entire cake in one pan which took much longer than the stated baking time (I had to add 15 minutes as each time I tested it the toothpick came out with batter on it). Next time I will divide the cake into two small 4" pans and hopefully it will not take so long to bake. The cake turned out quite dry. The frosting method was a little different as well and I found the freezer method created a dry, difficult to spread frosting. I''ll have to revamp that one too. I''m not giving up on the cookbook, but I was a bit disappointed with my first bake. It''s a beautiful book with helpful photos.
